Each attribute attached by whoever established it.

We buy and export coffee. What we want is a lot record where our own claims carry no more weight than they deserve.

    Origin recorded at purchase

    Which farm or cooperative, which harvest, entered when the cherry is bought rather than reconstructed at export.

    Moisture entered by whoever measured it

    At packing, by the person holding the meter, and fixed once entered.

  3. 03

    Cupping attributed to the cupper

    The score carries the identity of the table that produced it. A roaster can weigh that themselves.

  4. 04

    The lot travels with its record

    Splitting or blending produces new lots whose parentage is visible rather than asserted.

None of this stops a dishonest cupper. It stops an exporter quietly improving a number after the fact, which is the more common failure.
